I am also a U.S. citizen, which is proving an obstacle in my search for work abroad (a life dream that I'm getting increasingly anxious to fulfill), so I will gladly work somewhere that pays under-the-table.

Yes, it's not an English Speaking country. But - there's a qualification called Teaching English as a Foreign Language (TEFL) which you get whilst you're over there. You can teach kindergarten, high school, or college kids how best to use English, without having to learn any Chinese.
I'm probably going with: http://www.istplus.com/teach/ because it's a bit cheaper (yes, you have to pay to do it, but that sorts out your visa, and accommodation, as well as guaranteeing you a job whilst you're there) and offers a ten month contract, with no renewal fee. http://www.chinachallenge.com/ offer a pretty good deal, too, though they're more expensive. They offer 4, 5 or 10 month contracts, I think, though the four month is new and might not still be available. China Challenge is more expensive, but you get free lessons in Chinese, holidays, and some official tour things with it.
I know you said English-speaking only, but it's a thought. The other thing is - you don't have to speak any Chinese at all to do these. Most of the reason they're looking outside of China for English-speaking people is because they want to use English like Britain and America do, so they only expect you to speak English to whoever you're teaching.
